Tequila Lime chicken

Ingredients:

  • 2.5-3lbs boneless skinless chicken thighs
  • 1/4 cup olive oil
  • 1/4 cup silver tequila
  • 1/4 cup lime juice + the zest (about 4 limes)
  • 1/4 cup fresh squeezed orange juice
  • 3 cloves garlic, minced
  • 1 tbsp chili powder,
  • 1 tsp cumin
  • 1 tbsp salt
  • 1.5 tsp pepper
  • 1/4 cup chopped cilantro

A few notes on making this:

  • When summer hits and you’re looking for something to grill, this always hits the spot. The chicken cooks quickly and the marinade gives great flavor.
  • Reduce the marinade for extra sauce, if desired.
  • Use an an automatic juicer to quickly juice your citrus 

Directions:

  • Combine all marinade ingredients in a bowl or a large ziploc bag
  • Add the chicken, ensuring it is fully submerged.
  • Refrigerate for at least 1 hour, but ideally 3 to 24 hours for the deepest flavor.
  • Remove chicken from the marinade and shake off excess.
  • Cook over medium-high heat on a grill or in grill pan for about 5–7 minutes per side, until the internal temperature reaches 165°F.
  • Remove to a plate to rest before serving.
  • Reduce the marinade in a saucepan on high heat while the chicken cooks for extra sauce to serve.
  • Garnish with freshly chopped cilantro, if desired.
